Week Two: Sheet Pan Chicken and Vegetables

shopping list:
potatoes or sweet potatoes
carrots or cauliflower
broccoli or green beans
onion
peppers (poblano, jalapeno, or other)
lettuce
black beans
salsa
boneless, skinless chicken (3-4 breasts or 8-10 thighs)
pepper jack cheese
taco seasoning
tortillas
taco shells
tortilla chips
Cooking Night Plan:
~ Set oven to 425° and arrange chicken on a parchment-lined sheet pan. Drizzle with olive oil, sprinkle with salt and seasonings of choice.
~ Chop potatoes into small chunks, and other veggies into larger pieces so they’ll be done at about the same time).
~ Place veggies on a second parchment-lined sheet pan and drizzle with olive oil. Add salt, pepper, and any other seasonings you like and stir/toss to coat.
~ Move both pans to the oven and bake until chicken is done (25-30 min for breasts, 20-25 min for thighs) and vegetables are tender and crispy 20-35 min, depending on which veggies you use and how small you chop them).
~ While dinner is cooking, shred the pepper jack (stash in the fridge in a ziplock) and rinse and drain a can of black beans. Chop half an onion and one or two hot peppers and sauté in a little oil until they begin to soften. Stir in the beans, some taco seasoning, and 1/4 cup of water and cook over med-high heat for about 5 minutes. Remove from heat and set aside for later.
~ After dinner, cut half of the leftover chicken into bite-sized chunks and divide into serving-sized tupperware bowls with leftover vegetables. Shred the other half of the leftover chicken and stir it into the bean mixture. Refrigerate in a ziplock or tupperware.
Meal Options with Leftovers:
~ Cook one serving of chicken and veggies in a skillet with a little oil over medium-high heat, stirring frequently, until warmed through and potatoes are crispy.
~ Make a wrap sandwich with a tortilla and a serving of chicken/veg—warm in microwave, or add lettuce and dressing and eat cold.
~ Use chicken mixture and shredded cheese to make tacos, burrito, quesadilla, loaded nachos, or taco salad.
